Quick Pork Noodle Stir Fry with Sardine Garum
In just 30 minutes, this Pork Noodle Stir Fry combines lean pork, vibrant vegetables, and a hint of sardine garum for a savoury twist. Perfect for busy nights, this dish is both quick and satisfying, bringing together a medley of flavours and textures with a delicious umami depth.
Ingredients:
3 tbsp sesame oil
350g lean pork mince
350g egg noodles
Thumb-sized piece ginger, peeled and chopped, or 1½ tbsp ginger purée
3 garlic cloves, crushed, or 1 tbsp garlic purée
320g stir-fry veg mix (e.g. mangetout, baby sweetcorn, beansprouts, carrots, peppers)
1 tbsp Port Lincoln Sardine Garum
1 tbsp soy sauce
2 tsp cornflour
4 tbsp sweet chilli sauce
Recipe Method:
Cook the meat: Heat the sesame oil in a wok or frying pan over high heat. Add the pork mince, breaking it up with a spoon, and cook for about 8 minutes until browned.
Soften the noodles: While the pork cooks, boil a kettle and pour the hot water over the noodles to soften. Set aside for 5-10 minutes, then drain.
Add aromatics and veggies: Add the ginger, garlic, and mixed veggies to the pan with the pork. Stir-fry for 2-3 minutes until fragrant.
Make the sauce paste: In a small bowl, mix the soy sauce with cornflour to create a paste.
Combine ingredients: Add the sardine garum, sweet chilli sauce, and 2 tbsp water to the pan, stirring to combine.
Add noodles and finish: Finally, add the drained noodles and cornflour paste, tossing everything until the sauce coats the noodles. Add a splash of water if needed for consistency, then serve hot.
