Ingredients:

  • 3 tbsp sesame oil

  • 350g lean pork mince

  • 350g egg noodles

  • Thumb-sized piece ginger, peeled and chopped, or 1½ tbsp ginger purée

  • 3 garlic cloves, crushed, or 1 tbsp garlic purée

  • 320g stir-fry veg mix (e.g. mangetout, baby sweetcorn, beansprouts, carrots, peppers)

  • 1 tbsp Port Lincoln Sardine Garum

  • 1 tbsp soy sauce

  • 2 tsp cornflour

  • 4 tbsp sweet chilli sauce

Recipe Method:

  1. Cook the meat: Heat the sesame oil in a wok or frying pan over high heat. Add the pork mince, breaking it up with a spoon, and cook for about 8 minutes until browned.

  2. Soften the noodles: While the pork cooks, boil a kettle and pour the hot water over the noodles to soften. Set aside for 5-10 minutes, then drain.

  3. Add aromatics and veggies: Add the ginger, garlic, and mixed veggies to the pan with the pork. Stir-fry for 2-3 minutes until fragrant.

  4. Make the sauce paste: In a small bowl, mix the soy sauce with cornflour to create a paste.

  5. Combine ingredients: Add the sardine garum, sweet chilli sauce, and 2 tbsp water to the pan, stirring to combine.

  6. Add noodles and finish: Finally, add the drained noodles and cornflour paste, tossing everything until the sauce coats the noodles. Add a splash of water if needed for consistency, then serve hot.

Enjoy a flavourful, quick, and balanced meal that’s sure to satisfy!
